Honey Mustard Chicken Bake

4 boneless chicken breasts – skin removed
1/4 cup honey
1 tblsp yellow mustard
1 tblsp creamy Dijon mustard
1/4 tsp lemon pepper
1/2 cup shredded mozzarella cheese
cooking spray

Pre-heat oven to 380 degrees

Spray a square baking pan with cooking spray

Prepare chicken, rinse and pat dry. Place in bottom of baking pan.

Mix honey and mustards together, then pour over chicken spreading evenly.Sprinkle with lemon pepper.

Bake for 20 minutes.

Remove from oven using hot pads and sprinkle with cheese distributed equally on top of the 4 chicken breasts. Add more cheese if desired. Return to oven and bake for 10 minutes. Cheese should be browned and bubbly. Remove from oven and let sit for 2 or 3 minutes before serving.

Serve with brown rice sautéed with basil, onion, peppers and diced tomatoes and a fresh spinach salad.
